High in the Peruvian Andes Mountains, smallholder farmers produce Typica, Bourbon and Caturra coffee varietals. At these high altitudes, the cherries on these trees mature slowly, ensuring when picked ripe they produce the sweetest beans. Over the last few years, with an increase in demand and incentives for higher quality Organic coffees, Peru has put in the work to have a wider selection of specialty grade coffee. This year we are happy to share this sweet, balanced cup.
We recently spent several days with Rodrigo Sanchez and his family, touring his farms and tasting his amazing coffee. High in the mountains of Huila, Rodrigo and his talented team have four farms where they are pushing quality to its maximum. Rodrigo has ﬁlled his farm’s hillsides with exotic varieties and is doing groundbreaking experiments with processing methods. Of the over 100 coffees we tasted at his farm, this was our absolute favorite. Standing in the rain on Finca Monteblanco, we were told the story of how he discovered the rare Pink Bourbon variety on a neighbors farm. This coffee was honey processed to highlight the coffees natural sweetness. An additional fermentation step increased the acidity and complexity of the coffee. Body, sweetness, acidity, ﬁnish - this delicious coffee has it all.

We are pleased to once again offer this sweet and delicious coffee from the Finca di Dios farm in Guatemala. On 25 hectares of mountainous terrain, Ellen Prentice and her family work to produce some of the best quality coffee in Guatemala. This is our fifith harvest sourcing with Finca De Dios, and it is a relationship we hope continues for years to come.

“Keeping It Classy” is our version of what we want an all around delicious espresso to be. Alone it has notes of dark chocolate a viscous body and a lingering finish but there is nice acidity and complexity to shine through milk. The coffees for KIC espresso are always current crop and are sourced with these ideals in mind.
