This rich blend has a creamy body and notes of toasted marshmallow, dark chocolate and gram cracker, reminiscent of a classic campfire s'mores. This past November we took a trip down to Colombia with the intentions of finding great coffees and to build relationships with even better people. While we were there we tried over 100 different coffees from all different regions and brought back our favorites. This particular coffee comes from the Cauca region and is produced by ASPROFECH, an association of over 60 families, whose focus is to increase the production of specialty coffee and create transparency all along the supply chain. Ensuring fair prices that help in creating better living conditions and grants access to education. This coffee is a delicious representation of the collaborations being done in the region.
GUATEMALA FINCA LA ESPERANZA

Last year we traveled to the mountains of Huehuetenango, Guatemala and had the opportunity to meet with farmer, Francisco Morales. In the hopes of building relationships with producers, who are pushing the boundaries of what we consider exceptional coffees, Francisco's commitment to learning and sharing stories was the determining factor for a continued relationship. This years crop proves that his curiosity can lead to higher quality. This coffee was dried under shaded nets, to improve the gradual process of drying, with the aim to enhance flavor and prolong shelf life. The result of meticulous attention to detail is this incredible cup. Enjoy!
COSTA RICA LAS LAJAS HONEY
Tasting notes: Mixed Berry - Wildflower - Pie Crust
Francisca and Oscar Chacon, owners and operators of the Las Lajas Micromill are third-generation coffee producers and are know for being the pioneers of producing high quality honey processed coffees in Costa Rica. This particular lot is a Yellow Honey process. In the processing method they remove the fruit and leave 100% of the mucilage left on, this coffee is then slowly dried, being turned hourly on the bed. In the past we have served these coffees and are excited to once again bring the fruit of the Chacon's labor to SD.
The last two years we have offered sweet and vibrant coffees from Zambia. The response was overwhelmingly positive so we tried this year’s crop and again. The Kateshi & Isanya Estates have produced this incredibly sweet and clean natural processed coffee. This unique lot is of an unknown variety known as "Miracle" as it was one of the only trees to survive after being relocated form its native land of Indonesia. This coffee is the perfect representation of what a well processed natural coffee should taste like; sweet, with a juicy body and distinctive flavors of Grape Candy and Strawberries.
