Crispin Matias runs his farm in San Antonio Huista, Huehuetenango, Guatemala - a region know for its ideal coffee-growing conditions, with high altitudes, limestone soils, and a unique climate of hot days and cool nights. Despite challenges from climate change, Matias, a founding member of the Ascoiacion Integral Agricola Sostenible Toneca (ASIAST), has implemented sustainable practices like rainwater harvesting, composting, and planting native shade trees to protect his farm's future. His dedication yields a standout coffee with notes of green apple and the signature Guatemalan chocolate sweetness that makes these beans truly enjoyable.
